It's What's In The Chocolate...
Milk ChocolateMilk 32%: a very thick chocolate which we thin down just a little with cocoa butter to make it easier to use. Very pleasant honey flavors that complement the dairy notes. Certified Fair Trade and Organic.
Semisweet ChocolateSemisweet 49%: an exceptionally smooth product with a very pleasant background vanilla flavor. Well-conched and easy to work with. Certified Fair Trade and Organic.
White ChocolateWhite: the only Fair Trade milk chocolate available in the U.S.! We use this to make the filling of the peanut butter cups and to drizzle the smores. Because only about 25% of our clientele (university students) like white chocolate—as we learned from a study conducted by several students—we don't produce any white chocolate items. However, it’s very handy for color contrast.
Cocoa ButterCocoa butter: one should never thin chocolate with anything other than cocoa butter. Ours is Fair Trade/Organic. The cocoa bean contains 45% solids and 55% fats. Unsweetened chocolate is pressed to produce cocoa butter.
Unsweetened ChocolateUnsweetened chocolate: also known as chocolate liquor or cocoa mass or chocolate mass, this is the straight stuff. Nothing added. We add unsweetened chocolate to our 49% semisweet in order to make a 64% bittersweet. This is not the preferred method, as good chocolate is 100% conched to remove large, gritty particles. Like all our chocolate products, this is certified Fair Trade/Organic.
